Some of y'all asked why we don’t just process birds right here on the farm and sell them directly. Under HB 410, passed by the Texas Legislature in 2019, we can legally sell on-farm processed poultry in certain amounts.

However, here’s the reality: while the law allows it, insurance companies don’t always back it. Finding affordable liability insurance for on-farm poultry processing has been a challenge and we’re not willing to leave our family, farm, or customers fully exposed.

Additionally, most off-site meat processors will only handle broilers. They won’t process heritage birds, older roosters, other specialty breeds, or other fowl like turkey. That limits what we can offer through a commercial processor, and makes on-farm options even more important.

This is where our hands-on classes come in. Instead of doing it for you, we can teach y'all how to process your own bird. You get the confidence and skills to do it yourself, and we all stay protected and above board.
